Boy oh boy! When I was young, one of my favorite foods was mac n cheese. Especially the brand with the blue box! 🙂
How times have changed since those days of sitting around, eating lots of not-so-great food and getting chubby out of poor nutrition and no exercise!
What I love more than anything else about meal prep is finding recipes that satisfy my cravings for “junk” food but that are made with healthy ingredients.
Which is why I am so excited today to share with you this great recipe for mac n cheese. It’s made with cauliflower instead of macaroni and uses cheddar cheese, cream cheese, and coconut milk to give it a nice cheesy consistency.
