Earlier this year, while vacationing on Southern California, I crossed the border south to Tijuana and had a bite of authentic Mexican cuisine. Eating rice, beans, and steak with a tall glass of horchata made me realize how much I was missing out on.
I came back home determined to incorporate a taste of Mexico into my ketogenic meal prep. And boy did I strike a winner with these simple ham and cheese enchiladas!
I’m a big fan of cheese, so any recipe that calls for tons of cheese gets my approval! And with the enchilada sauce, you’ll feel for a few minutes that you are enjoying an authentic delicacy – but without the guilt of breaking your diet!
This recipes makes for a great lunch or dinner and goes really well with a salad. The first time I made them, I accompanied them with a broccoli slaw and it was oh-so-amazing!
