Whoa! That was my first thought as I bit into this salmon, fresh out of the oven. Historically I have’t been a big fan of fish but I am now pushing myself to question my preconceived notions, including when it comes to my food preferences.
This recipe is soo good! ..Even though half of the ingredients aren’t too high on my “love” list (salmon and dijon). It seems that baking fish is a good way of removing the “fishy” smell.
This week for my meal prep, I’ve made this dish as a snack. It may seem like an odd snack but given that it’s a great source of protein, I highly recommend that you give this one a try! It makes for a perfect mid-afternoon or evening munch (whenever you feel that your energy goes down). The protein will help you get through your day like a boss!
Thaw out the fish fillets and then prepare a baking sheet by covering it with foil.
Spread the dijon mustard over the salmon and then sprinkle the salt and black pepper. Bake for about 15 minutes. Use a fork to check if the salmon flakes.
The end result is a super-yummy snack that you can easily store in a prep container for the entire week.
